My school is having an Irish Food Cooking Contest and I want to enter! The categories are: Salads/Appetizers, Side Dish/ vegetables, Main Entrees, Bread, and Desserts.
The entries will be judged on taste, originality, and presentation.
Any suggestions, KP?

Colcannon (or
cál ceannann, I'm sure KP will correct me!) is my absolute favourite Irish dish -- basically mashed potatoes and cabbage, which sounds nowhere near as awesome as it tastes. There are a few different ways to do it but I think the best is with bacon or ham -- you might like to have a look at this site

They actually didn't specify in the email how many to cook for, but I'm sure a small dish will do, enough for a few judges to taste test. Besides, I'm a broke ass college student living off of ramen noodles and grilled cheese sandwiches. You better believe I'M gonna be the one to eat most of it in the end.
