Tonight for a snack i made me a tomato sandwich. Soft white bread. juicy ripe tomato slices. kraft mayo. salt and lots of pepper. SOOOO good~!!!!!

Soft brown pitta bread filled with fresh hummous, chopped cucumber, cherry tomatoes, sprinkle of lo-salt, and shredded lettuce. Mmmm.

Italian Sub ~ Atlantic City Style

first get out a jar of mayo, second, throw it in the trash! italians don't use it. seriously, first you need a nice italian sub roll, if you're within driving distance of a.c. by the sea go here: http://www.formicabrosbakery.com/
they're the best. if not, a good french baguette will suffice. slice it in half lengthwise and brush it with olive oil mixed with balsamic vinegar, basil, thyme, rosemary, oregano, salt and pepper. next place about 1/3 to 1/2 lb. of provolone cheese so each half of the sub roll gets half of the cheese slice. do the same with 1/2 lb. of mortadella, (italian bologna), 1/2 lb. of genoa salami, (it has the peppercorns in it), 1/2 lb. of ham capicola, (it's smaller so 1 slice on each side all the way down the sub roll). next place nice iceberg lettuce all the way down evenly, then do the same with thinly sliced tomatoes and thinly sliced yellow onion leaving them in large rings. squirt your seasoned oil & vinegar on top of the veggies and top with crushed cherry peppers, (pastene brand is best).
lastly, slice in half and dig in. serves 4 people for lunch 2 for dinner or 1 if you're a glutton. btw, if you're ever in atlantic city , nj be sure to stop in at the best sub shop in the multiverse: http://whitehousesubshop.net/

I prefer Scandinavian style open face sandwiches, referred to as "smorebrod".
They taste fabulous, and they also look like works of art on a plate.
